Chef Bian prepares Quick Fried Egg Whites with Dried Scallops

Ingredients:
6 egg whites
1/4 cup dried scallops
2 tbsp salt
3 tbsp corn starch
1 cup herbs
Methods:
- Mix egg whites and herbs
- Heat a little water in a wok/frying pan
- Add heated water to egg whites to start the cooking process
- Add the dried scallops, salt
- Add the corn starch and stir
- Heat oil in the wok and then pour in the mixture, stirring all the time
- Serve in traditional rice noodle cups
