Black Lentil Soup

Ingredients:

2 cups of green lentils
1 cup of diced bacon
1 1/2 cup of diced carrots
1/2 diced yellow onion
2 chopped garlic cloves
1 cup of diced celery
1 bouquet garni
4 grilled "Joza" chorizo sausage
2 diced red tomatoes
5 cups of chicken stock or water
1 cup of diced potato
1 tbsp of peanut oil

 

Methods:

  1. In a pot, place the lentils in cold water. Bring it to a boil, then strain and wash the lentils
  2. In a medium size pot, put in oil and bacon. Cook until you obtain a nice golden color.
  3. Add the onion and garlic and cook for 4 minutes. Add the lentils, carrots, bouquet garni, celery, chorizo, potato and stock (or water), and cook for 18 minutes.
  4. Take the sausages out and cut them in small pieces.
  5. Put the cut sausages back in the pot and add the diced tomatoes and salt. Serve hot.
