Servings: 4

Ingredients:

1/2 cup cucumber, sliced
1 tsp thai chili paste
1/2 cup soy sauce
1 tbsp fresh minced ginger
1/2 tsp sesame oil
4 scallions
1/4 cup rice vinegar
1/2 bunch cilantro, shredded
1/4 cup water
1/4 cup pickled ginger, shredded
2 tbsp toasted sesame seeds

 

Garnish:

1 tbsp wasabi
2 tbsp toasted sesame seeds
1 cup warm sushi rice
1/4 cup pickled ginger
1 pound yellowfin tuna, cut in julienne strips (best to use #1 sushi grade tuna)

 

Methods:

  1. Combine all the ingredients. Let set for one hour.
  2. Marinate tuna for 15 minutes
  3. Slightly drain tuna and mold with sushi rice
  4. Roll in sesame seeds to "crust" the rice
  5. Garnish with pickled ginger, and wasabi.
