1/2 pound capellini, cooked and drained 1 each egg 1 each red pepper, roasted and diced 4 each scallions, minced 1/4 cup parmesan cheese, grated 1/2 red onion, minced 1 tsp. Garlic, minced salt and pepper to taste

In a hot griddle top or oiled sauté pan, drop a handful of pasta mixture and fry until crispy
