Chef Kal prepares Chocolate Velvet Cupcake

Ingredients:

1lb. Semi sweet chocolate
1lb. Sweet butter
1/4 cup granulated sugar
1 cup all purpose flour
3/4 cup egg yolks
9 whole eggs
praline paste
8 brioche cups

 

Methods:

  1. Melt chocolate and butter, set aside.
  2. Whip all the eggs together, add sugar and whip until thick. Reduce speed, add flour and chocolate. Fill to top with chocolate and bake for 10 minutes at 350°.
  3. Place in refrigerator until firm.
  4. Butter brioche cups, fill half of the cup with chocolate mixture and place 1/2 tsp. of praline paste in center.
