Banff, Alberta (Episode #29)

The heart of the famed Canadian Rocky Mountains is The Banff National Park, (Canada's first national park) with its untold majesty and varied all-seasons terrain for the outdoor enthusiast. The Park is 2564 square miles of rugged alpine countryside. Right at the heart of the park is The Banff Springs Hotel, a jewel in the crown of Canadian Pacific Hotels which rises as a castle among the snow capped peaks of The Rockies. Opened in 1888, this grand hotel dominates the town of Banff Springs with the most awesome spectacle to be seen, either looking at or from the hotel itself.

Taste of Life visits with Executive Chef Martin Luthi who shows us some of the special cuisine made famous in The Rob Roy Dining Room. This hotel, with 150 cooks on staff certainly has a wide variety of food styles to choose from and we see Martin create a Roasted Pheasant Breast with a Birch Syrup sauce.

The Rob Roy Dining Room

Our fine dining choice is The Rob Roy Dining Room at The Banff Springs Hotel with Executive Chef Martin Luthi, (seen here with Host Catherine N.Blythe) who prepares for us his signature dish of Roasted Pheasant Breast Glazed with Birch Syrup, Parsnip, Corn and Apple Puree Melted Leek, Grilled Shitaki Mushrooms, Birch Syrup and Red Wine Reduction.
